Despite being marginalized and overlooked in traditional cultural roles, these 212 smallholder growers from the southern state of Chiapas have come together to challenge gender inequality and pursue new economic opportunities. The resulting coffee is a dazzling display of the hard work and skill that went into its production. It boasts a combination of Typica, Bourbon, Caturra, and Catuai varietals, hand-depulping, small-tank fermentation, and sun-drying, all meticulously sorted to meet European Preparation standards. The result is a blend of rich cocoa, warm nuttiness, and sparkling fresh-fruit acidity that is emblematic of the distinctive flavors of Chiapas coffee.
