This particular red honey process bean, produced through a meticulous process, scored an impressive 92. Employing over 400 workers who reside on the property, they are paid wages nearly 300% higher than the Fair Trade Standard. Since acquiring the land in the early 1990s, the Ramirez family has transformed it from dry and barren to one of the world's most environmentally progressive and socially conscious estates. Not only do they yield exceptional coffee, but they also prioritize sustainability by recycling materials used in the coffee processing.
Through fermentation, they are able to convert coffee cherry remnants into natural gas, which powers their facility. The used water is also recycled and filtered, while cherry pulps are used as fertilizer for neighboring farms. This coffee bean from the Dominican Republic's Jarabacoa region is a red honey-processed caturra variety grown at an elevation of 1,400 meters. During fermentation, the skins of the fruit are removed but the mucilage remains on the bean, resulting in a sticky-sweet sensation and fruity notes. The length of fermentation determines the darkness and sweetness of the honey process.
