At Montano Micro Mill, cherries are depulped while retaining a portion of the mucilage layer. The coffee then enters sealed, stainless-steel fermentation vessels where oxygen deprivation triggers anaerobic fermentation, cultivating a sophisticated acid profile including lactic and malic compounds.
